Madeleine Teatime Treats - Make up a thin glace icing by mixing 50g icing sugar with 1 – 2 tsp water. Add a drop of pink food colouring. Spoon over the tips of Bonne Maman Madeleines and add ready-made sugar flowers and leaves or pastel-coloured sprinkles. Dip the tips of Bonne Maman Madeleines into glace icing or melted chocolate and sprinkle with toasted flaked almonds. Dust with icing sugar.

The prettiest Easter cakes can be made in minutes by adding clotted cream and mini sugar-coated chocolate eggs onto the Madeleine. Add extra chopped chocolate and a dusting of icing sugar.
